Dubuk
Dubuk is a superfood dish made from black beans (Black Soyabean), loaded with highly beneficial vitamins and minerals. It is very beneficial for the liver and helps in detoxifying the cancer-causing compounds in the body. ( Click here to Know more. )
Dubuk cooks for hours on low flame, which gives a delicious taste that is pleasing to the mouth. It is best served with rice, pishi lud, salad, and mint or bhang ki chutney. This keeps the body warm during the winter season, which makes people less prone to health like Cold or Fever. You must try this dish when you come to Uttarakhand. It is traditionally made without any spices and onions.
Bhatt Ki chudkani
Bhatt ki Churkani is also a dish made from black beans (Bhatt) and is easy to prepare and has many health benefits.
Kaapa
As we know or must have heard at least once that we should eat more green leafy vegetables. And this is the recipe that is mainly made from Lai (Indian Mustard). Since the main ingredient is Lai, the benefits of this vegetable are great. Lai (Mustard green) contains micronutrients and many beneficial compounds, especially vitamins A, C, and K. Gahat-ae-dawo (Gahat ki Dal)
Here Maa, Papa, Ama, and Babu all say that drink the dal of the gahat, there will be no gallstones. The presence of stones in the gallbladder is a common problem. Many articles on the web claim that Gahat (horse gram / Kulthi) is beneficial in reducing gallstones (पित्ताशय या गॉलब्लाडर की पथरी या पित्त की पथरी).
